  • 1 1/2 cups fresh apricots, pitted (or frozen)
  • 1 1/4 cups vanilla ice cream
  • 1/3 cup whole milk or apricot nectar
  • 1 tsp honey
  • 1/4 tsp vanilla or almond extract

Method
 

  1. Blend apricots (skin on is fine if ripe), ice cream, milk, honey, and extract.
  2. Taste — apricots vary wildly in sweetness. Adjust honey.
