Ingredients

  • 2 cups vanilla or chocolate ice cream (slightly softened)
  • 1/2 cup whole milk (more for a thinner shake)
  • 2 tablespoons unsweetened cocoa powder
  • 2 ounces dark chocolate, melted and slightly cooled (60–70% cacao)
  • 1 tablespoon sugar or simple syrup (optional, to taste)
  • Pinch of salt
  • Whipped cream and chocolate shavings, for serving (optional)

Method

  1. Melt the dark chocolate in short bursts in the microwave or over a double boiler, then let it cool for a few minutes so it doesn't seize when it hits the cold ice cream.
  2. Add the ice cream, milk, cocoa powder, melted chocolate, sugar, and salt to a blender.
  3. Blend on high for 20–30 seconds until thick and smooth, stopping to scrape down the sides if needed.
  4. Taste and adjust — add more milk for a thinner consistency or more chocolate for extra intensity.
  5. Pour into a chilled glass, top with whipped cream and chocolate shavings, and serve right away.
