Lemon Blueberry Milkshake

Ingredients
  

  • 1 cup frozen blueberries
  • 2 cups vanilla ice cream (slightly softened)
  • 1/2 cup cold whole milk
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon lemon zest, plus extra for topping
  • 1 tablespoon honey (optional, if your berries are tart)
  • Whipped cream and a few fresh blueberries, for topping

Method
 

  1. Add the frozen blueberries, milk, and lemon juice to a blender and blend for 15 seconds until the berries break down.
  2. Add the ice cream, lemon zest, and honey if using.
  3. Blend on high for 20-30 seconds until thick and smooth, with the shake turning a soft violet color.
  4. Taste and adjust: a little more lemon for brightness or milk for a thinner texture.
  5. Pour into a chilled glass and top with whipped cream, fresh blueberries, and a final grating of lemon zest.
